Pinterest recipe: Lemon cupcakes with jam filling!

Hii! As promised I am sticking to my schedule and series, so I had a scroll through Pinterest for an easy recipe and came across one for lemon cupcakes with a raspberry jam filling! Super duper easy and they actually turned out really great to say I can’t cook/bake for shit.

INGREDIENTS

For the Cupcakes:

2 cups self-raising flour // 1/2 tsp baking powder // 1/2 tsp salt // 1 1/2 cup sugar // 1 stick unsalted butter // 4 eggs // 3/4 cup of buttermilk // 1/2 cup lemon juice // zest of lemon

Filling and topping:

Raspberry jam // Whipping cream // Raspberries

Before i go on to how to make them i wanted to mention these cute measuring cups/spoons that i found in asda for jus £1 each!!

HOW TO MAKE

1// Mix the flour, baking powder and salt in a small bowl

2// In a larger bowl, mix together butter and sugar until fluffy

3// Beat in eggs one at a time

4// Mix in the flour mixture and buttermilk

5// Mix in the lemon juice and zest

6// Bake at 350 (160 c) for 20 minutes

7// Once cooled, use a small knife to cut out the middle, leaving a little bit to put back on top after

8// Fill the hole with jam and cover with the little cut out

9// Whip the whipping cream and put on top of cakes

10// Add a raspberry if you fancy

I am really pleased at how these turned out for me, they were super easy to make and so yummy that i ate 4 in a row (oops).

Here is the original pin that i had found this from… There were so many other cupcakes on this list, and after making the lemon ones i’m definitely going to have to attempt all the others.

Please let me know of any pinterest recipes you want to see me try out, as this will be a regular feature on the 6th of every month!

Also, if you try out this recipe, let me know what you think and send me a pic too!!
