Hii! I’ll be the first to admit that I’m not the worlds greatest baker (or cook for that matter), but I do love the process of baking, it’s so relaxing and you get something yummy (mostly) at the end of it.. even if you do make a great mess from doing it.
Anywho, I found these cookie dough brownies on Pinterest not too long ago and thought I’d give them a go seen as it’s a mixture of two of my favourite things! Plus the title had the word ‘easy’ in it.
For the brownies you’ll need…
250g unsalted butter // 350g brown sugar // 6 eggs // 1 tbsp vanilla // 1 tsp salt // 300g dark chocolate // 350g plain flour
For the cookie dough you’ll need…
175g butter // 180g light brown sugar // 50g caster sugar // 300g plain flour // 350g chocolate chips or chunks // 10 tbsp whole milk (or any type of milk really) // 2 tbsp vanilla // 1 tsp salt
How to make the brownies!!
Preheat oven to 160 and prepare brownie pans (either 1 large or two small).
Combine the butter & sugar until pale and fluffy. Add the eggs one at a time. Then add the vanilla and salt.
Melt the 300g of chocolate, let cool slightly and then pour into the mixture whilst gently stirring.
Add the flour and fold together.
Scoop the brownie batter into the tin/s and bake on the middle shelf for approx 45 minutes (if baking in 3 separate tins, check after 25 mins).
How to make the cookie dough!!
Combine the butter, light brown sugar and caster sugar, and beat together.
Add the vanilla, salt and milk, and incorporate the flour before adding the chocolate chips/chunks.
To combine the two!!!
Allow the brownies to cool to room temperature and then spread the cookie dough mix evenly on top of the brownies, in the same pans.
Cover with cling film or foil and refrigerate over night.
I found these quite easy to make and they were super yummy! I will say though that the batch size was huge, I have so many of these that I ate a few, gave some away and just had to throw the rest 😦
